Chipotle Honey Fish Tacos

Ingredients:

  • Flour Tortillas
  • Cod fish, cumin, black pepper, salt and limes
  • Honey, Chipotle powder, olive oil, vinegar, salt
  • Napa cabbage, carrots, cilantro

Prepare Cod Fish:

Cut # pound of cod fish into chunks. Season the cod with cumin, black pepper, salt and ¸ lime. Chill for an hour. Place the fish in a non-stick pan and cook in the oven for 20 minutes at 375 degrees.

Chipotle Honey Mayo:

  • # cup honey-room temperature
  • # tsp of Chipotle powder
  • # tbsp of olive oil
  • # tsp of vinegar
  • Dash of salt

Mix the honey, chipotle, olive oil, vinegar and salt together. Let it sit for 5 minutes.

Napa Cabbage Slaw:

  • #head of cabbage, sliced julienne style
  • # carrot, sliced julienne style
  • Diced cilantro

Lime salt dressing:

  • Squeeze juice of 2 limes into a bowl.
  • Add # tsp salt
  • Add # tsp olive oil

Assemble:

  • Warm two flour tortillas.
  • Add a generous amount of chipotle honey mayo on the tortilla.
  • Add the cod.
  • Add the cabbage and the carrots.
  • Sprinkle the lime salt dressing on top.
